THE CAVIAR

When the Original Tins of caviar (1kg and 1.8 kg) arrive at ICONE, they are immediately stored in a cold room to start their process of maturation: it is at this point that  the long operation of ageing begins.

Around three months after the harvest, the eggs begin to reveal their true aromas.

Our ICONE's experts have mastered the ancestral know-how of ageing the eggs using their five senses to reach the perfect maturity.

  • The selection starts with the flavour of the caviar: we smell the caviar.

  • Then the sight intervenes: we observe the brightness, the color and especially the texture of the grain.

  • Then comes the sound, we listen to the caviar. We say that a good caviar "sings".

  • The sense of touch is also essential to test the firmness of the caviar.

  • Taste comes at the very end: we roll the caviar in the mouth like we do with wine, to observe its complexity, its length in the mouth and accurately determine its potential.

It takes at least a decade of tasting caviar almost every day to become a true ICONE Caviar specialist!

WHICH AMOUNT OF CAVIAR DO I NEED?

Caviar lovers know that when you are a true amateur of those little pearls, 50g won't be enough!

 

For a first discovery you can always share a 50g tin. Otherwise we recommand at least 50g of caviar per person, with a variety of side dishes (blinis, sour cream, scrambled eggs, potatoes).


Beyond 100g, you will amaze your guests and delight caviar lovers.

HOW TO CHOOSE & SAVOUR CAVIAR?

Always make sure the tin you have selected has a CITES number.

Once you purchase your caviar, you have around three months to enjoy it. Make sure to always keep it in the coldest part of your fridge, and open it only at the last minute.

Eat the caviar with a spoon made out of a neutral material like mother-of-pearl or wood as silver reacts with the fish eggs.


Put a small quantity in your mouth and savour the roes rolling between your tongue on your palate.

Aware that caviar remains a valuable natural resource, we choose farms that do not disturb the environment and existing eco-chains and never use illegal and abusive breeding methods.

SAFEGUARDING STURGEON MEANS QUALITY CAVIAR

Sturgeon farming and the sale of caviar are protected by CITES, which controls international trade of endangered species of wild fauna and flora.

Naturally, ICONE Caviar totally obeys these regulations to fully safeguard the species. 

It takes years for a sturgeon to develop and mature its roe. This is the reason why caviar, especially from controlled farming, is very expensive.

In addition to time factor, there are numerous operations required to breed the fish under the best conditions: the environment, the nutrition and its health.

Control of the state of the water and its biochemical balance are essential for the life of sturgeons.

The dimensions of the outdoor tanks, which perfectly reproduce the fish's natural habitat, the balance use of suitable nutrients, removal of the roe in a protected environment and its rapid preservation at controlled temperature are all aspects that give ICONE Caviar a top position in the production of caviar.
